Il est facile de manger végétarien en Inde puisque dans la plupart des restaurants, vous trouverez des plats pure veg ou non veg. En revanche, pour manger vegan en Inde, il faudra que vous précisiez bien que vous ne consommez pas de lait, de beurre, de fromage ni de yaourt.

Bonne nouvelle cependant :

Les plats à base d’œufs sont systématiquement considérés non veg. Ne soyez pas surpris si une omelette figure dans une carte pure veg, cela signifie simplement qu’elle est faite à base de farine de pois chiches.

Rassurez-vous, manger vegan ne relève pas du parcours du combattant ; il suffit d’apprendre quelques termes culinaires pour pouvoir trouver son bonheur au menu.

Vous pourrez ainsi goûter les poha, faits à base de flocons de riz, les upma, à base de semoule, les idli, préparés à base de riz et cuits à la vapeur, les vada, composés de pommes de terre et frits dans l’huile, les uttapam, sorte de pancake salée faite à base de lentilles et de riz, les dosa, crêpes faite à base de riz. Ces dernières sont souvent fourrées (masala dosa), avec une préparation à base d’oignons et de pommes de terre.

Pour les plats principaux, vous trouverez une grande variété de légumes et de légumineuses accompagnés de pains délicieux. Ils sont souvent servis avec deux sauces, une aux légumes et l’autre blanche ou vert pâle. Pas d’inquiétude, elle est faite avec du lait de coco

Vous pourrez aussi tester d’excellents thalis, ces plateaux circulaires constitués de plusieurs petits plats comprenant un potage, des légumes, du riz. Pensez toutefois à préciser sans « curd » ou sans « raïta », sorte de yaourt.
